The Ultimate Guide to Growing Tomatoes: From Seed to Harvest

Growing tomatoes is one of the most rewarding experiences a gardener can have. Whether you have a sprawling backyard garden or a modest collection of pots on a balcony, tomatoes are a crop that nearly anyone can grow successfully with the right knowledge and a little patience. The smell of a tomato plant on a warm summer afternoon, the vivid red of a fruit ripening on the vine, the incomparable flavor of a tomato you grew yourself — these are pleasures that no grocery store can replicate.

This guide will walk you through everything you need to know about growing tomatoes, from selecting the right variety to troubleshooting common problems, so you can enjoy a bountiful harvest all season long.


Choosing the Right Tomato Variety

The first decision any tomato grower must make is which variety to plant. With thousands of tomato varieties available, this can feel overwhelming, but it becomes much easier once you understand a few basic distinctions.

Tomatoes fall into two broad categories: determinate and indeterminate. Determinate tomatoes, sometimes called bush tomatoes, grow to a fixed height, set their fruit all at once, and then stop producing. They are an excellent choice if you want to make a large batch of sauce or preserve tomatoes, since the harvest comes in a concentrated window. Popular determinate varieties include Roma, Celebrity, and Rutgers.

Indeterminate tomatoes, by contrast, continue to grow and produce fruit from the time they set their first blossoms until frost kills the plant. These are the vining tomatoes that can climb six, eight, or even ten feet tall on a sturdy support. If you want fresh tomatoes on your table every week throughout the summer, indeterminate varieties are the way to go. Beloved indeterminate types include Brandywine, Sungold, Cherokee Purple, and virtually all cherry tomatoes.

Beyond growth habit, you should also think about size, color, flavor profile, and disease resistance. For beginners, disease-resistant hybrids like Early Girl or Better Boy offer reliability and generous yields. For experienced gardeners seeking extraordinary flavor, heirloom varieties like Black Krim or Green Zebra are worth the extra attention they require.

Also consider your climate. In short-season climates, look for varieties with a days-to-maturity count of 65 or fewer. In hot, humid areas, prioritize disease resistance, particularly against fungal issues like early blight and Fusarium wilt.


Starting Tomatoes from Seed

Starting tomatoes from seed gives you access to a far wider range of varieties than you will ever find at a garden center, and it saves money if you grow in quantity. The timing of seed starting is critical. Tomatoes need six to eight weeks of indoor growth before they are ready to go outside, so count back from your last expected frost date to determine when to start.

Fill small seed-starting cells or trays with a high-quality seed-starting mix — not regular potting soil, which is too dense for delicate seedlings. Moisten the mix thoroughly before planting, then sow seeds about a quarter inch deep. Tomato seeds germinate best at soil temperatures between 70 and 80 degrees Fahrenheit. A heat mat placed under the trays can make a significant difference if your home is cool.

Once germination occurs, usually within five to ten days, move the seedlings to your brightest window or, better yet, under grow lights. Tomato seedlings need fourteen to sixteen hours of strong light each day. Without adequate light, they will become tall, spindly, and weak — a condition called “leggy” — which will compromise their performance once they are transplanted outdoors.

Water seedlings carefully, keeping the mix moist but never waterlogged. Overwatering is one of the most common mistakes with seedlings and can lead to damping off, a fungal condition that causes seedlings to collapse at the soil line. Water from the bottom by setting trays in a shallow dish of water and allowing the mix to absorb what it needs.

When seedlings develop their first true leaves — the second set of leaves to appear — begin feeding them with a diluted liquid fertilizer every week or two.


Hardening Off and Transplanting

Tomato seedlings raised indoors have never experienced wind, direct sun, temperature fluctuation, or low humidity. Moving them directly from a cozy indoor environment into the garden would shock them severely. The solution is a process called hardening off, which gradually acclimates seedlings to outdoor conditions over one to two weeks.

Begin by setting your seedlings outside in a sheltered, shaded spot for an hour or two on the first day. Over the following days, gradually increase their outdoor exposure and introduce them to more direct sunlight. By the end of the hardening-off period, they should be spending full days outside with no protection.

Choose a transplant day that is overcast and mild if possible, which reduces transplant shock. Dig a hole deep enough that you can bury the stem up to the lowest set of leaves. Tomatoes are unusual in that they can form roots all along their buried stems, so deep planting creates a more robust root system. If your seedling has become leggy, you can bury it at an angle in a shallow trench and train it upward.

Space most standard tomato varieties 24 to 36 inches apart. Cherry tomatoes and large indeterminate varieties may need even more room. Good air circulation between plants reduces the risk of fungal disease.

Water transplants in deeply and, if the weather is still cool, consider using season-extending devices like row covers or water-filled cloches to protect young plants from unexpected frosts.


Soil, Fertilizing, and Watering

Tomatoes are heavy feeders that thrive in rich, well-draining, slightly acidic soil with a pH between 6.0 and 6.8. Before planting, work several inches of compost into your beds to improve both fertility and drainage. A soil test, available inexpensively through most cooperative extension services, will tell you exactly what your soil needs.

At planting time, many gardeners add a handful of slow-release granular fertilizer or a shovelful of aged compost to each planting hole. Some also add crushed eggshells or a calcium supplement to help prevent blossom end rot, a common disorder we will discuss shortly.

Once plants are established and begin to flower, switch to a fertilizer that is lower in nitrogen and higher in phosphorus and potassium. Too much nitrogen at this stage produces lush, leafy plants that are slow to set fruit. Look for a tomato-specific fertilizer or a formula labeled for vegetables and fruiting plants.

Consistent watering is arguably the single most important factor in a successful tomato harvest. Tomatoes need about one to two inches of water per week, either from rainfall or supplemental irrigation. The key word is consistency. Irregular watering — dry spells followed by flooding — causes a condition called blossom end rot and another called cracking, where fruits split open as they ripen. Both are caused not by disease but by inconsistent moisture levels.

Water deeply and infrequently rather than shallowly and often. Deep watering encourages roots to grow downward, making plants more drought-tolerant. Drip irrigation or soaker hoses are ideal because they deliver water directly to the root zone without wetting the foliage, which reduces disease pressure. If you water by hand or with sprinklers, water in the morning so that leaves can dry before evening.

A thick layer of mulch around your plants — straw, wood chips, shredded leaves, or even newspaper — conserves moisture, regulates soil temperature, suppresses weeds, and reduces the splash of soilborne pathogens onto lower leaves.


Supporting Your Plants

Almost all tomato varieties benefit from some form of support, and indeterminate types absolutely require it. Unsupported tomato plants sprawl on the ground, where they are vulnerable to pests, disease, and fruit damage.

Tomato cages are the most common support method and work well for compact determinate varieties. For large indeterminate plants, most store-bought cages are inadequate — the plants quickly outgrow them and topple over. Instead, invest in heavy-gauge wire cages or build your own from concrete reinforcing mesh, which is strong enough to support even the largest vining plants.

Stakes are another popular option. Drive a six-foot wooden or metal stake about a foot into the ground a few inches from the plant, then tie the main stem to the stake as it grows using soft ties or strips of cloth. The Florida weave is a variation of this technique used in commercial production, where twine is woven back and forth between a row of stakes to support multiple plants efficiently.

Trellises work particularly well for indeterminate tomatoes trained to a single stem, a technique called suckering or single-stemming, which we will cover next.


Pruning and Suckering

Indeterminate tomatoes produce small shoots called suckers in the crotch between the main stem and each branch. Left unchecked, each sucker becomes a full-sized branch, and each branch produces its own suckers. Within a few weeks, a plant can become a tangled thicket that is difficult to manage and slow to ripen fruit.

Many gardeners choose to remove suckers, at least those that form below the first flower cluster, to keep plants manageable and direct energy into fewer, larger fruits. The debate over how aggressively to sucker is ongoing. Some growers remove every sucker and train to a single stem, which produces fewer but larger fruits that ripen earlier. Others allow one or two suckers to develop secondary stems and remove the rest, balancing yield with manageability.

To remove a sucker, simply pinch it out with your fingers when it is small — no tools needed. If a sucker has grown larger, use clean pruning shears and make a clean cut.

Regardless of your suckering philosophy, it is generally a good idea to remove all leaves below the first fruit cluster once plants are established. These lower leaves are most susceptible to soilborne diseases and removing them improves air circulation at the base of the plant.


Common Pests and Diseases

Tomatoes are susceptible to a long list of pests and diseases, but most of them are manageable if caught early.

Among insects, hornworms are the most dramatic. These large green caterpillars can strip a plant of its foliage remarkably fast. Hand-pick them in the evening, when they are easier to spot, or look for their dark droppings as a clue to their location. Aphids cluster on new growth and the undersides of leaves, causing curled, distorted foliage. A strong spray of water knocks them off, or you can apply insecticidal soap. Whiteflies, spider mites, and stink bugs can also be troublesome depending on your region.

Among diseases, early blight is nearly universal. It causes dark spots with concentric rings to appear on lower leaves, which then yellow and fall off. It progresses upward through the plant over the course of the season. Removing affected leaves promptly, mulching, watering at the soil level, and applying a fungicide preventively when conditions favor disease (warm, humid weather) are the best defenses.

Late blight is the more dangerous cousin of early blight, capable of destroying an entire plant within days under the right conditions. It was responsible for the Irish potato famine. Look for water-soaked gray or brown lesions on leaves, stems, and fruit. Remove and dispose of affected tissue immediately — do not compost it.

Blossom end rot, as mentioned earlier, appears as a dark, sunken, leathery patch on the bottom of fruits. It is caused by calcium deficiency in the developing fruit, usually as a result of inconsistent watering rather than a lack of calcium in the soil. Consistent watering is the cure.


Harvesting Your Tomatoes

The wait is the hardest part of growing tomatoes. Most varieties take 60 to 85 days from transplant to first harvest, and cherry tomatoes generally come in at the earlier end of that range.

Tomatoes are ready to harvest when they have reached their characteristic color — red, orange, yellow, pink, or purple depending on the variety — and give slightly to gentle pressure. They should detach easily from the vine with a slight twist.

You do not have to wait until tomatoes are fully ripe on the vine. Once they have begun to change color, tomatoes will ripen perfectly well indoors at room temperature, away from direct sunlight. This is useful knowledge in the fall, when the threat of frost arrives before all your fruit has ripened. Bring green tomatoes indoors and let them ripen slowly on a countertop.

Never refrigerate a tomato before it is fully ripe. Cold temperatures halt the ripening process and degrade the flavor compounds that make homegrown tomatoes so special. Even after ripening, store tomatoes at room temperature and eat them within a few days for the best flavor.


Saving Seeds for Next Year

If you grow open-pollinated or heirloom tomatoes — not hybrids — you can save seeds from your best fruits and replant them the following year. Select a fully ripe fruit from a healthy, vigorous plant with characteristics you want to preserve.

Scoop the seeds into a jar with a small amount of water and let them ferment at room temperature for two to three days, stirring daily. This process removes the gel coating on the seeds, which inhibits germination, and also kills some seed-borne pathogens. Afterward, rinse the seeds thoroughly, spread them on a paper plate or screen to dry completely, and store them in a cool, dark, dry place in an envelope or glass jar.

Properly stored tomato seeds remain viable for three to five years.


The Joy of Growing Your Own

There is a particular satisfaction that comes from growing your own food, and tomatoes deliver that satisfaction in abundance. Every challenge you overcome — the aphid outbreak you controlled, the late blight you caught in time, the irregular water supply you corrected with mulch and a drip line — teaches you something that makes you a better gardener the following year.

Tomatoes are also extraordinarily generous. A single well-tended plant can produce 10, 20, or even 30 pounds of fruit over the course of a season. Surplus tomatoes can be canned whole, turned into sauce, roasted and frozen, dried, or given away to grateful neighbors.
